Why does freeze-dried fruit taste so intense?

Because most of the water is gone.

Fresh fruit is largely water. Freeze-drying removes most of that water while leaving the fruit itself behind.

What changes is the experience: the fruit becomes incredibly light and crisp, but still tastes unmistakably like the fruit it came from.

How much fresh fruit goes into one 20g pouch?

Approximately 200–225g of fresh fruit goes into one 20g pouch. Freeze-drying removes most of the water, leaving 20g of freeze-dried fruit. Exact input varies by fruit, season and batch.

Why is freeze-dried fruit crunchy instead of chewy?

Because freeze-drying removes water in a very different way.

The fruit is frozen first. Under vacuum, the frozen water leaves directly as vapour — a process called sublimation.

That leaves behind a dry, porous structure instead of the dense, flexible texture associated with conventional dried fruit.

What is the difference between freeze-dried fruit and dehydrated fruit?

Both remove water. The biggest difference is how they remove it.

Conventional dehydration typically uses warm air or heat over time. Freeze-drying freezes the fruit first, then removes the frozen water directly as vapour under vacuum through a process called sublimation.

Because freeze-drying avoids the prolonged heat exposure typical of conventional hot-air drying, it generally preserves heat-sensitive nutrients and bioactive compounds better. It also does a better job of protecting the fruit’s colour, aroma and porous structure.
